Freshly baked and lavished with butter – what better?
2 cups flour
1 tsp bi-carb
½ tsp baking powder
125g soft butter
1 cup castor sugar
1 tsp vanilla essence
3 large bananas, mashed
Set oven to 180°C and grease and flour and line a loaf tin 20 x 12 x 7cm.
Sift the dry ingredients and set aside.
Cream the butter and castor sugar with the vanilla and add one of the eggs.
Stir in a tablespoon of the flour and then add the other egg.
Fold in the mashed banana and the balance of the sifted flour mixture, adding a bit of milk if needed for a soft dropping consistency.
Bake for about 45 minutes.
Turn out when cool.
Store covered and wrapped until needed.
