2 to 3 brinjal

Olive oil

Salt and milled black pepper

3 tomatoes, chopped

½ red onion, peeled

2 cloves garlic, peeled

2 chillies, deseeded and chopped

1 tsp sugar

1 bunch spinach, cooked and chopped

1 round feta cheese

Cut the brinjal into slices, drizzle with olive oil, and season with salt and pepper.

Bake at 200ºC for 15 to 20 minutes until soft.

Slice the onion and crush the garlic.

Chop the tomato into cubes.

Chop the deseeded chillies.

Gently fry the onion and garlic until soft, add the tomato and chillies.

Add the sugar, season and cook gently.

When soft and pulpy, remove from the heat.

When cool, mix the brinjal, tomato and spinach together, and add the feta cheese. Toss, check seasoning and serve.
