Up to now we have just sliced and eaten it, maybe pounded it and put it on a sandwich, or at most mixed it with cream cheese for a dip. But modern South African chefs are doing wonderful things with traditional food. Enjoy! 125ml butter, 2 beef stock cubes, 10ml coarsely ground black pepper, 2ml whole nutmeg, grated 2ml freshly ground coriander...

Lots of Sharks and Bulls but no Storm or Lion and Cheetah frenzy The Super 14 is already taking its familiar team position format as far as the South African teams are concerned with the two big guns from Durban and Pretoria stamping their authority and class right from the start. The question on all Bulls tragics out there is whether they can they travel well this year, they have to negotiate the Hurricanes ( very tough ), Highlanders ( do-able ), Crusaders (can be done as they are showing cracks at last, the mighty Crusaders ), Waratahs ( extra tough ), Bumbies (hard in Canberra ).

It was sadly back to work on the 3rd with a very slow and long week with a daily craving for bacon and eggs around 10am and a nap after lunch. The start of the touch rugby season was very evident when I fell out of bed on Saturday morning and could hardly walk. I woke up the other morning feeling a little tired but a carton of beer richer and my sporting pride firmly reinstated after I witnessed the Proteas convincingly whip the Aussies.

Taking time out to recharge the batteries is so important, and sometimes you can be lucky and create some of those ďonce-in-a-lifetimeĒ moments. We recently took a short family break to Tangalooma Wild Dolphin Resort on Moreton Island, a short hop across the bay on Brisbaneís doorstep. Well I cannot recommend it enough, even for those living interstate it is well worth a holiday trip in itís own right.

In my role as a franchise consultant I was invited recently to speak at a networking event on the Gold Coast, exclusively for the hospitality industry. It was a fairly informal event and, in these circumstances, I just ad-lib my presentation depending on the attendees and the mood of the group. The person who spoke immediately before me presented some statistics regarding the Hospitality Industry and, particularly, the number of new start-ups that either changed hands or closed down within the first five years of operation. He quoted a massive 90%.

Itís possible that you are totally unaffected by the global financial crisis - but itís unlikely. I have to admit, I was determined not to participate, but the time is now here for determined proactivity, not avoidance. That way we may well end up being unaffected, or even better - better off. The proactivity necessary right now is to go back to basics in your business. Iíve prospered through two previous recessions, and Iíve learned what works. Love your product. Ensure you love your existing customers to bits. nd love it all so much that you canít stop yourself from selling, 24/7.

One of the most challenging things we face in our current economic climate is generating new business. A business man I spoke to recently told me that heís had to lay off seven of his nine staff. Itís the worst heís had it in 25 years! Donít get me wrong, Iím not suggesting we should panic, just pointing out that while it is good to say we wonít let ourselves be talked into a recession, we have to face the facts before we can dosomething about it.
